Ya a lot of guys out here like it super fish heavy so every bite has at least a 1/2” chunk. If your cooking for 4 hrs for safety I wouldn’t be super concerned- anything that’s safe as sashimi should be fine, But I’m no food expert. Most of our spear boats will cut up the first fish on deck and throw it in to get ceviche rolling for the first break the divers take

I'm cooking 4 hours because that's what the recipe I found online said. I don't really know any better. I always use fresh caught fish so I'm not worried about safety from bad fish. Next batch I make I'm going to cut it back some because I cut my fish into pretty small pieces and mine has been a bit tangy.
