Here's one I stole from another site for Simple Man since that's all he catches:
Get it on ice within 20 minutes. The fillets are not real pretty, but when pan-fried in butter & diced tomatoes, then finished with the obligatory shakes of salt/pepper and squirt of lemon, they taste fine. A notch below reds & trout, but WAY better than mud cats & gar.
1. Don't bother keeping small ones (not enough bone-free flesh), or any that you can't get to the cooler quickly. They get mushy. 2. Use the spoon fillet method. You will get lots of fine bones until you figure out that they aren't framed like trout. 3. Big ladyfish can save the day if you are otherwise skunked.

Tried Ldyfish twice .. years ago and again his fall (with some big ones) ... I can't filet enough of that mushy meat off of them to eat ... quick ice might help though ... Who has a Toad Fish recipe? Might be like Monk fish if you ever tried it

I grew up considering mullet a bait fish, but since moving north of Miami, I've eaten mullet a time or two and it ain't half bad. There's a big drive in Florida to get people to catch and eat Lion fish since they've become so abundant... they say it's good but I'm not trying those either. What's a Monk fish?

T Top, I think Henry's recipe for blackened mullet would be perfect for toad fish or as I call them dogfish. I think a nice teriyaki sauce would compliment the pine better than BBQ. ?
