Some interesting stats on this model that I have learned thru my research. The draft on the 2004-05 sv2100 is 10". But beyond 2005 it jumps to 16". Not sure why or what causes that since from what I can tell the hull design didnt change and the hull weight on both is 1,900 lbs.All things being equal, I think I'd prefer the 2004-05 model with 10" draft.

That's a typo. Same hull, same draft.

On the deep hulls there was a reduction on the beam that caused it to run deeper. I think there were some reporting changes as well like having to report it with a motor installed.

Again, I don't think it's a typo, rather a difference in reporting requirements as many hulls that did not change suddenly drafted a few more inches in 2006. Hulls that did change is a different situation.

This is one of those mysteries that makes me wish we had an old sea pro employee that contributed to the forum. Their insight into what we see would be very helpful.

Juan, You have a 2004 sv2100 what does yours draft?? I've never stuck a ruler in the water and it depends on the weight I have in the boat but I'd say 10" is right. I can easily float in 10" with the motor up and run on plane in 16" but it takes over 2 ft to get back on plane without hitting bottom. And since there were no changes in specs or hull design between 2004 and 2006, I still say the deeper draft is a typo. No way that hull draws 16" (at least not with a 150 on the back but I wouldn't know about anything larger)
