Filet, leave skin on. Coat in olive oil, put on tin foil skin side down, season as you like (Tony Chaceres, paprika and lemon pepper), grill until flesh whitens. (10-15 min). Awesome eating fish when grilled.

My favorite recipe for spanish: Cut em in half, insert hook and use them to catch a grouper.

.... or remove skin and red streak of meat in center of fillet, and fry it up!
