I am building a building for the boat and a work shop. I currently dont have a t top, but I want to make sure I build it with enough door opening to allow a t top to get in. So, what is the clearance from the floor to the top of the t top on a bay boat, 1900 or 2100?

If you build it 14 ft you'll be safe. I think the legal maximum height for towing is 13' 6". Mine measures right at 13' and that's with the crow's nest on top of the t-top.

The 240 Proline (a much bigger/taller hull) I sold last year was 12'6" to the GPS antennae on the tee top as a point of reference. My SV2100 has no top but as ahe sits on the trailer the sole is maybe 40" to the ground so add in the height of whatever top you're considering and there's your answer - relative to how high yours is on the trailer.
Builders are different as to what height door they will give you relative to wall height - the 14' walls Juan mentioned above are a good number. My shop has 12' walls and no way anything with a tee top is going inside but the front 30'of my shop is open/carport like so the boat stays in there, and the Proline I mentioned fit just fine.
And I don't know how big of a shop you are considering but don't neglect length - a 21' bay boat is 27/28 on the trailer with the motor up.
