I've been playing with a sous vide cooker for about a year now, and it is really cool. Here is a summary of my first years experience:
Pork: unbelievably better than any other way I've cooked it. Beef: good steaks meh, I can cook a good steak better on the grill, and they taste exactly like outback or longhorn. Brisket is incredible, roasts are awesome! Chicken: Great! It's like brining without having to brine Fish: I haven't had the guts to try, as my regular fish is hard to beat. I'll break down and try year 2. veggies: mixed bag. Carrots are great, others are good, but not worth the extra work so far. Deer: Unbelievable! I cooked a backstrap that you would not believe.

I have never heard of this and when I checked it out online, I have never seen one of these. Is this a glorified crock pot? Something new maybe?? Your meals sound awesome though. Keep on cooking.

I had to Google it too. Sounds like it makes good food but the only thing I can cook in water are hard boiled eggs and I can't even get the wife to try an air fryer.

yeah, you cook it in a controlled water bath sealed inside a food saver type bag. It's low and slow and really changes the game on a bunch of things. I have ribs in it now. Tomorrow, I'll smoke them for 2-3 hours and they are amazing.

Yes Sous Vide! Plan ahead because it takes a lot of time, but the precision of the cook is unbeatable. Ever try to cook a 4" bone-in pork chop at home? It's either raw in the middle, completely dried out or burned on the outside. Sous Vide can make it perfectly, uniformly cooked throughout and juicy as you please. Look at this Filet Mignon. Does it get any better? I even cooked a whole leg of lamb in mine. I'll never put one in an oven again. Great discussion, Freezer. Everybody should try this.

How long does it take to cook a meal? Can you cook several things at once? Other than the bags, how does it differ from a crock pot?

Time depends on what you’re cooking. You could multiple things if they needed to achieve the same temperature. The difference from the Crock Pot is that you tell the Sous Vide exactly what temperature you want your XXXXX to be and it will never get any hotter than that so it won’t dry out or burn.

Yep, I cooked a brisket for vacation @165f for 30 hours, then put it on the smoker for 4 hours and it was excellent.

Slow cooked meat is always supposed to be the best but who can wait 30 hours to eat? Cooking chicken breasts, jalapeno sausage and zucchini on the grill this afternoon (while consuming a few Stella Artois) for one of my daughter's birthdays.. probably have it all ready to serve in 30 minutes.
